Ayala Perle 2015
2015
Ayala Perle 2015 is the Aÿ house’s prestige vintage, blending 80% Chardonnay with 20% Pinot Noir from five Grand Cru villages and aged for at least eight years under cork.
Ayala Perle 2015 is the prestige-vintage expression in a house whose modern identity is strongly shaped by Chardonnay, restrained dosage and precise cellar work. The blend is 80% Chardonnay and 20% Pinot Noir, drawn from Aÿ, Chouilly, Cramant, Le Mesnil-sur-Oger and Oger.
The wine spends at least eight years ageing under cork and is finished at 5 g/L dosage. AYALA also retains traditional handling for the cuvée, including riddling on pupitres and hand disgorgement, making the production method part of the wine’s identity rather than simply a prestige label.
Champagne AYALA was founded in Aÿ in 1860 and today belongs to Groupe Bollinger. The current house style is Chardonnay-led even across its core multi-vintage wines, so Perle feels like a more selective extension of an existing theme rather than a separate stylistic world.
Within the range, Brut Majeur remains the clearest introduction to the house. Le Blanc de Blancs is the more direct route to pure vintage Chardonnay, while Collection N°18 is the specialist parcel-focused bottling. Perle sits above those wines as the mature prestige blend, combining Chardonnay dominance with Pinot Noir and markedly longer cellar time.
For buyers, the appeal is unusually concrete: exact Grand Cru sourcing, a declared 2015 vintage, long under-cork ageing and low dosage.
Choose Ayala Perle 2015 when you want the house at its most ambitious and cellar-intensive, with the distinction coming from precise sourcing and maturation rather than exaggerated luxury language.
