Cellar and winemaking

The documented wines use slow pressing in a traditional Coquard press, followed by settling and fermentation in small temperature-controlled stainless-steel tanks. The current records specify complete malolactic conversion.

The Brut Blanc de Blancs is currently documented at 36 months on lees and 6.5 g/L dosage; Mes Vieilles Vignes at five years on lees and 5.5 g/L; and Rosé de Saignée at two years on lees and 8 g/L.
