Billecart-Salmon Le Sous Bois White

Non-vintage

Billecart-Salmon Le Sous Bois White is a non-vintage Champagne assembled from Chardonnay, Pinot Noir and Meunier, vinified entirely in oak and given extended lees ageing as the clearest expression of Billecart-Salmon’s oak-led side.

Billecart-Salmon Le Sous Bois White occupies a distinctive position in one of Champagne’s most complete house ranges. Billecart-Salmon is an independent family maison based in Mareuil-sur-Aÿ, founded in 1818, and its modern portfolio stretches from the multi-vintage Le Réserve and Le Rosé through zero-dosage, vintage and prestige wines to the single-parcel Clos Saint-Hilaire. Le Sous Bois is the bottle to choose when the interest is specifically in the house’s use of oak. It is a non-vintage Champagne assembled from Chardonnay, Pinot Noir and Meunier, vinified entirely in oak and given extended lees ageing. That makes it very different in purpose from Le Réserve, which is the broadest reference point for the house, or Brut Nature, which focuses attention on the absence of dosage. The wine is also a useful reminder that Billecart-Salmon should not be understood only through its famous rosé. The cellar has invested steadily in the capacity to work with parcels and styles separately, including renewed oak vinification from 2010 and the addition of large oak casks in 2018. Le Sous Bois is the clearest expression of that part of the maison’s winemaking toolkit. For buyers, the appeal is not simply that oak is involved, but that the cuvée has a defined place in the hierarchy. It sits above the everyday entry point in terms of technical ambition, yet remains separate from named prestige releases such as Cuvée Nicolas François, Elisabeth Salmon, Louis Salmon and Clos Saint-Hilaire. If you already know Le Réserve or Le Rosé, Le Sous Bois is an excellent next bottle because it shows another side of the same house without moving into the scarcity or vintage specificity of the prestige tier. It is a serious, oak-shaped multi-variety Champagne with enough individuality to stand apart while remaining unmistakably part of the Billecart-Salmon collection.
