Consider roast poultry, a savoury mushroom dish or a gently aged hard cheese, but taste before committing to a pairing. Extra-Brut indicates a restrained finishing dosage; it cannot tell you everything about the wine’s texture or maturity. When buying, check that the bottle is specifically the 2019 release, along with its format and any available disgorgement information. Noces de Craie is best appreciated as a vintage wine.
